XO sauce is a luxury condiment.To be clear, there is no brandy in XO sauce, but plenty of other ingredients go into this savory seafood jam.Crispy pork and dried seafood are constants in XO sauce, along with aromatics like shallots, ginger, garlic, and chiles. After these ingredients are fried in hot oil,  simmered wit rice wine, soy sauce, chicken stock, brown sugar, and spices until the sauce reaches the consistency of marmalade.From there, the XO can be jarred up and stored in the refrigerator for well over a month, but I guarantee it will be hard to keep it around for that long because you will soon hit the bottom within several days due to it’s marvellous taste.

Ingredients/Quantity: 200g

Storage instructions: Store in the refrigerator for 3 days, in the freezer for 7 days

Warming instructions: Put the sauce and water in the pot at a ratio of 2:1, continue to add the cooked ingredients and simmer until the sauce thickens.

Suggested ingredients: seafood such as crab, shrimp, snail.

Note: steamed seafood before cooking with sauce
